I love sweet potatoes, they're so delicious and healthy! This is my favorite way to eat them, and even though I add butter, I personally still consider this recipe healthy-ish. You can always cut down the butter or use lower calorie butter alternatives, but personally I LOVE butter so I use the real stuff. I eat this as a meal for lunch sometimes, or eat it with some kind of protein for dinner!
There are a couple really important tips for baking the perfect sweet potato though, so here they are!
Ingredients:
- 1 Sweet Potato
- 1 tbsp Olive Oil
- 1 tbsp Butter
- 1/2 tsp Sea Salt
- Sprinkle of Chili Powder and/or Cayenne Pepper (optional)
Directions:
1. Preheat oven to 400 degrees F.
2. Rinse potato really well until any dirt is washed off, then dry with a paper towel
3. Brush entire potato with olive oil

4. Poke holes in the potato with a fork, this allows for the steam to escape and keeps the inside from getting too mushy

5. Wrap the potato LOOSELY in tin foil, and then place in preheated oven

6. Bake in oven for 25 minutes, and then take out of oven, unwrap from tinfoil, and put back in oven for about 20-30 more minutes depending on the size of your potato
7. When the potato is done cooking you'll see bubbles coming out of the holes you poked, and it will be really easy to cut with a knife. You can always check the doneness just by trying to poke a small hole in it with a knife, if it's hard to cut, then keep baking it for a little bit longer

8. Cut open the potato lengthwise, then make cuts in it as shown below.
*This step is optional, you can always just put a slab of butter on top... but I like to cut the butter in thin slices and put it in between the cuts so it gets to the entire potato, melts more quickly, and makes the potato easier to mash! I like to call this my butter canal system because I'm weird and nerdy like that...

9. Mash the potato and then sprinkle with Salt! I love putting a sprinkle of Chili and Cayenne pepper as well but you can always skip that step
